For this recipe I use part of the chutney mixed with oil to marinate the fish. This is a good way to use a few big sprigs, or more if you like. I’m trying to use as much as I can before it completely takes over. This year I remembered to give the mint its own container, but it’s still growing wild and trying to hop over into my garden beds. I love coconut and mint, and they’re surprisingly delicious together. Now it tastes like a Thai condiment made in a Florida girl’s kitchen. I adapted this from a classic Indian chutney. The base is shredded coconut and fresh herbs, all kicked up with some hot chiles. I think a thick fillet of grilled grouper is better than a burger anyway, especially with a big dollop of this coconut mint chutney.

I know, fish is not classic 4th fare, but I’ll dress it up in red, white, and blue and make it look festive.

We’re firing up the grill, but forgoing the burgers because we’ve got a freezer full of fish.

Serve this type of chutney with chaats, sandwiches.Happy Friday & Fourth of July weekend! Any cookout plans?.

Blend all the above ingredients along with half an onion till it forms a fine paste.

Serve this type of chutney with dhokla, dosa or idli.

Blend all the above ingredients along with roasted peanuts till it forms a fine paste.

Serve this type of chutney with dosa or idli or any south Indian snacks.

Blend all the above ingredients along with fresh grated coconut till it forms a fine paste.

Serve with tandoori chicken and chicken kababs.Mix the yogurt to get a nice chutney consistency.Use little less lemon juice in this type of chutney as yogurt will also give some sourness.

Blend all the above ingredients above except yogurt till it forms a fine paste.

Yogurt / Coconut / Roasted Peanuts / Chopped Onion - 1 cup (as needed for the type of chutney to be made).

The herb is cholesterol free and is a warehouse of anti –oxidants, vitamins, essential oils and dietary fiber, which helps to control blood cholesterol and blood pressure. Mint has abundant health benefits and need to be included in some way or the other in our daily diet. Just plant a thick stem of store bought Mint leaves in a pot and it will yield abundant mint leaves throughout the year. Mint or Pudhina is the easiest available herbs and can be easily grown in our kitchen garden. She quickly gave me an idea, of not 1 but 3 different varieties of chutney with one basic ingredient, mint. As I was talking to her, I also was whining to her of how my hubby is a chutney fan and demands varieties of chutneys for each tiffin item. I and my brother were great fans of her dishes. Not only she explored different varieties but also adept in making the correct quantity with perfect taste. They were very thrilled to see me after 20 longs years and began reminiscing my younger days to my kids and husband. I recently visited one of my very old family friends, lakshmi aunty and Raghavan uncle, who were also our neighbors near my parent’s house.
